Waiting for this amazing banana bread to cool was almost as bad as waiting to launch our new site! Baking banana bread is a perfect utilization of overripe bananas other than in a recipe for a natural, homemade face or hair mask. I usually unpeel and keep frozen bananas in a plastic bag in the freezer so they are ready to add to protein shakes or smoothies. Occasionally, the bananas accumulate faster than I can use them and need to put to further use ie. banana bread.
Enjoy our recipe-
Ingredients: 3 very ripe bananas -mashed, 1/3 cup of local honey, 1/4 cup extra virgin olive oil or avocado oil, 1/2 cup rolled oats, 1 3/4 cup almond or whole-wheat flour, 3 eggs, 1/4 cup milk of choice, 1 tsp vanilla extract, 2 tsp cinnamon, 2 tsp baking powder, 1/2 cup walnut pieces & a pinch of salt
Directions: Preheat oven to 350. Whisk honey and oil together while adding and mixing in eggs and all other wet ingredients. Add remaining ingredients and mix. Bake in a greased loaf pan for 45 minutes or until toothpick comes out clean.
